Easiest Lemon Meringue Pie, EVAH!

Making Meringue has always scared me, so I avoided it. Like the plague. Well, Wednesday, I thought I’d try out the plague making some meringue.  Much easier than I thought.

I totally cheated on everything else though.  I used a pre-made pie crust (cooked it for 10 minutes first), then added canned lemon filling (Wilderness) and cooked at 350°F for 12 minutes.

Then the fun began.

Meringue:

  • 3 egg whites, at room temperature (room temp is the KEY)
  • 6 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar

Beat the egg whites at high speed with an electric mixer until soft peaks form. With mixer running, add the cream of tartar, then gradually add the sugar, a tablespoon at a time, and beat until stiff peaks form. Beat in the vanilla.   (Don’t beat it so much it turns back to a liquid, if you do you have to start over with new eggs)

Pile atop pie, and bake at 350°F for 12 to 15 minutes, or until lightly browned.

When I make this again (yes, I said when) I’ll put some milk on the edge of crust when I bake it the first time so it doesn’t brown so fast.

JELL-O Easy Patriotic Pie

Kraft sent out an e-mail a week ago and I thought - HOW FUN!  So we tried THIS ONE today.  Oh man is this recipe good.  And very few Weight Watcher points when you use sugar-free jello and fat free whipped topping.  We didn’t use any real fruit in the recipe (the jello made it fruity enough for us).

This was my first time ever to try blueberry jello (I am NOT a jello fan) and I have to admit I like it, a LOT!  Super simple recipe:

1-1/2 cups boiling water, divided
1 pkg.  (4-serving size) Berry Blue Flavor Gelatin
1 cup ice cubes, divided
1  Graham Pie Crust (6 oz.) - we used an 9 oz pie crust cuz the 6 oz was not NEAR big enough
1 pkg. (4-serving size) Strawberry Flavor Gelatin, or any red flavor  ~personally I felt like there was too much strawberry jello in this recipe, but then, it’s probably just me since I don’t like jello that well.
1 cup  thawed COOL WHIP Whipped Topping

STIR 3/4 cup of the boiling water into dry blue gelatin mix at least 2 min. until completely dissolved. Add 1/2 cup of the ice cubes; stir until ice is melted. Pour into pie crust; refrigerate 5 to 10 min. or until gelatin is set but not firm.

MEANWHILE, stir remaining 3/4 cup boiling water into dry red gelatin mix in separate bowl at least 2 min. until completely dissolved. Add remaining 1/2 cup ice cubes; stir until ice is melted. Cool 5 min. or until slightly thickened.

SPREAD whipped topping over blue gelatin layer; cover with red gelatin. Refrigerate 2 hours or until set. Store leftovers in refrigerator.
