Bing Bars or Cherry fudge as some call it are my favorite Christmas time treat.
To start you will need:
2 cups sugar
2/3 cups evaporated skim milk
1/2 cup butter (unsalted)
1 cup small marshamallows (or 12 large ones)
dash salt
Over very low heat melt the evaporated skim milk, butter and sugar. The trick to this is to make sure the sugar is completely dissolved before heating it up to a boil. You may even have to taste test (ah darn) to be sure it’s dissolved. Just looking at it doesn’t always show that it’s not dissolved.
Then add the remaining ingredients and bring to a boil, once at a boil stir constantly and boil for 5 minutes.
Then add:
5 oz cherry chips (1/2 bag)
1 tsp vanilla
Pour into an ungreased 8 x 8 square pan (clearly I didn’t plan ahead cuz all my square pans were used so I had to use a round one - no problem - I personally took care of the round edges
).
Place in fridge (or cool spot) until firm.

Once firm, take it out to warm up a little so the chocolate top will stick to it (otherwise it will just be two parts — yummy parts, but not stuck together parts).
Then in a microwave safe bowl (glass preferrably) melt the following ingredients:
1 cup peanuts, crushed (I used a baggie and a rolling pin- but honestly there’s gotta be an easier way)
3/4 cup peanut butter
12 oz chocolate chips (a full bag)
Pour over the cherry mixture and place in the refrigerator til firm. Cut into squares and ENJOY!
